New Class Starts April 7th

First, I want to thank everyone for participating in the Workout to support a Community member. Yesterday, April 2, 2016, was both magical and memorable. People from all around gathered at the BFA Fairfax High School gym to support a woman and her family that we all know and love. The Workout consisted of Boot Camp, Zumba, followed by Yoga. A special thank you to Kathy Bourdeau, Zumba instructor and Lonnie Poland, Yoga instructor. Thank you to the one and only, the most amazing, Paula Coli for helping me coordinate the event. BFA Fairfax National Honor Society students volunteered their time; thank you gentlemen. A special thank you to RiseVT, Moretti and his crew for setting up shop with their smoothie bike and wonderful prizes along with their healthy message. Another special mention is the BFA St. Albans Boys Varsity Lacrosse team. They came to show support for their assistant coach’s mother. It’s impressive to have high school students get up early and attend a grueling workout first thing on a Saturday morning. Thank you to Mark Capsey, their head coach for encouraging and supporting the students. When I looked out from the stage onto the sea of people wanting to be tortured, it warmed my heart to see long-time boot campers, newcomers and people from all ages and backgrounds.

Pass the Word…Class is Happening 2/27 @8am . . . Mondays return to 6:30pm

This is school vacation week, but since it’s Town Meeting Day tomorrow, we’ll be having boot camp at the same time . . . 8am!

We’ll also start Mondays at 6:30pm (no more 7pm start time due to winter sports). Still no Thursdays. Looking for another instructor to help when I’m not available to teach on Thursdays.

Homemade Power Bars

  1. Place almonds, flax meal, shredded coconut, almond butter and salt in afood processor
  2. Pulse briefly, about 10 seconds
  3. In a small sauce pan, melt coconut oil over very low heat
  4. Remove coconut oil from stove, stir stevia, honey and vanilla into oil
  5. Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste
  6. Press mixture into an 8 x 8 inch baking dish
  7. Chill in refrigerator for 1 hour, until mixture hardens
  8. In a small saucepan, melt chocolate over very low heat, stirring continuously
  9. Spread melted chocolate over bars; return to refrigerator for 30 minutes, until chocolate hardens
  10. Remove from refrigerator, cut into bars and serve

HERE’S ONE RECIPE: CASHEW LARABAR

Ingredients
  • 1 cup Medjool dates, pitted
  • 1 cup raw cashews
  • ¼ cup peanut butter
  • 1 tablespoon water
Instructions
  1. Combine dates, cashews, peanut butter and water in a food processor and puree until mixture starts to stick together. Add a little more water if necessary to help mixture come together.
  2. Pick up date mixture and using your hands work to squeeze it together into one big clump. Mash it down on a cutting board or sheet of wax paper to form into one even rectangle shape using the sides of your hands (or a knife) to make the edges straight.
  3. Slice into 12 even squares. For best results store in the fridge, although bars can be kept at room temperature.

First Class of 2016

Week 2: Show Me Your Meal

It doesn’t have to be a dinner related meal. Anything from an egg creation to a flavorful meal that your children enjoy. Thank you to Jennifer Bishop at The Farm Store for sponsoring this Challenge. Last week Julia won locally grown red and gold beets.

The drawings take place every Monday night. There are four weeks in this Challenge.

A few rules: All recipes must exclude Refined Carbohydrates. Ideally, they should include Complex Fibrous Carbohydrates. Don’t know the difference? Do a little homework 🙂

February Challenge: Show Me Your Meal
