Boot Camp Change

It’s a hard decision, but I can no longer hold boot camp classes at Cambridge Elementary school. This is due to my family’s VERY busy schedule and having two instructors moving on in their lives too. Coffee. I want to thank Lisa Schukei for coming up with the idea of holding boot camp classes in Cambridge. I also want to thank Callie for being an integral part of the instructor crew.

I would love to hold a few more classes; however, I have two major events happening this Wednesday and next Wednesday and no one to cover. We will still hold classes in Fairfax on Monday and Thursday nights at 6:30pm and Saturday at 8am. I know there’s Zumba and Pilates in the Lamoille County area; however, I’m not aware of other types of classes.

This class gave me an opportunity to meet more amazing people! Thank you for coming to LSD Boot Camp and giving it your all. I hope to see you in Fairfax. And for some of you, I know we’ll be doing a few races together.

  • Rhubarb is one of the least calorie vegetables. 100 g fresh petioles provide just 21 calories. Nonetheless, it contains some vital phyto-nutrients such as dietary fiber, poly-phenolic anti-oxidants, minerals, and vitamins. Further, its petioles contain no saturated fats or cholesterol.
  • The stalks are rich in several B-complex vitamins such as folates, rhubarb stalksriboflavin, niacin, vitamin B-6 (pyridoxine), thiamin, and pantothenic acid.
  • Red color stalks contain more vitamin A than in the green varieties. Further, the stalks also contain small amounts of poly-phenolic flavonoid compounds like β-carotene, zea xanthin, and lutein. These compounds convert to vitamin A inside the body and deliver same protective effects of vitamin A on the body. Vitamin A is a powerful natural anti-oxidant and is required by the body for maintaining the integrity of skin and mucus membranes. It is also an essential vitamin for healthy eye-sight. Research studies suggest that natural foods rich in vitamin A help the body protects against lung and oral cavity cancers.
  • As in other greens like kale, spinach, etc., rhubarb stalks also provide good amounts of vitamin-K. 100 g of fresh stalks provide 29.3 µg or about 24% of daily recommended intake of this vitamin. Vitamin K has a potential role in bone health by promoting osteotrophic (bone formation and strengthening) activity. Adequate vitamin-K levels in the diet help limiting neuronal damage in the brain; thus, has established role in the treatment of Alzheimer’s disease.
  • Its stalks also contain healthy levels of minerals like iron, copper, calcium, potassium, and phosphorus. However, most of these minerals do not absorb into the body as they are subject to chelating into insoluble complexes by oxalic acid, and excreted out from the body.

Safety profile

Top green part of rhubarb leaf (blade) contains unusually high amounts of oxalic acid, a naturally-occurring substance found in some vegetables. 100 g of leaves contain about 0.59 – 0.72 mg of oxalates. Lowest published lethal dose (LDLo) of oxalate in humans is 600 mg/kg. Oxalate can cause severe symptoms even at much lower concentrations than this on the human body. Symptoms may include burning in the eyes, mouth, and throat; skin edema, difficulty breathing. In severe cases, it can result in kidney failure, convulsions, coma, and death.

Whoever said that rhubarb is useful just for baking rhubarb bread and pies and muffins? Rhubarb is so very suitable to use when cooking dinner too! I made this rhubarb chili for supper tonight, and it was extremely tasty! I will definitely make this again soon!

Ingredients

*or 2 pounds ground beef or 2 pounds ground pork

1 pound *ground beef
1 pound *ground pork Rhubarb Chili - Best Chili Recipe - a Different Chili
2 medium onions, chopped
2 garlic cloves, minced (or add garlic flakes)
2 cans (10 oz. size, each) beef broth
1 can (28 oz. size) diced tomatoes
1/3 cup raisins
1 tsp. chili powder
1 1/2 tbsps. vinegar
1/4 tsp. salt
1/4 tsp. allspice
2 cups chopped rhubarb (fresh or frozen rhubarb)
2 cans (10 oz. size, each) black beans, (with liquid)
1/4 cup slivered almonds
Salt and pepper to taste, for frying meat
1 cup water, including 3 tbsps. corn starch mixed in, for thickening chili
Grated cheese, for garnish (optional)
